Filete de pescado con mantequilla de anchoas

Ingredientes para 10 personas.

  • 10 filetes de 200 grs cada uno
  • 300 gramos de mantequilla de buena calidad
  • 2 laticas de anchoas
  • 6 limones Tahití
  • 2 dientes de ajo
  • 2 cucharadas de perejil picado
  • 2 cucharadas de cilantro picado
  • Sal y pimienta al gusto
  • Harina de trigo
  • 4 kilos de papa criolla
  • Aceite de oliva.

Preparacion:

  • Cortar los filetes de pescado al gusto. Sazonar con jugo de limón, sal y pimienta
  • Apanar los filetes con la harina
  • Botar los excedentes
  • En una sartén caliente agregar aceite de oliva y dorar los filetes por tantas bien dorados
  • Preparación de la mantequilla
  • En un procesador de alimentos, colocar la mantequilla y todos los otros ingredientes
  • Enrollar de la manera indicada en clase
  • Servir sobre cada filete
  • Acompañar con puré de papas criollas con suero costeño y un poco de ralladura de limón.
